    This Thread is for Recipes for Wild game, Mushrooms, etc. (Fish Recipes have thier own area under gone fishing)

    I haven't done this on in a while, and it was figured out by experiment, but I did it several times, and it was pretty good. (Your results may vary)

    First brown some Squirrel legs and the other minor muscles in a frying pan
    then arrange them in the bottom of a baking dish,
    Mix together Fried Onions and Cream of Mushroom Soup (you will need to adjust that part according to how many legs) and pour in so as to cover the legs.
    (You also may wish to add Green Beans, but that is up to you)
    Cover all that with a layer of Tater-Tots
    Place in an oven pre-heated to 325 for 45min.
    Dang, now I'm all hungry!

    By the way, never eat Squirrel brains; some of them have a form of Mad Cow, I guess it would be "Mad Squirrel", but anyway, it is communicable to humans. While at Ft Campbell many, many moons ago, some Kentuckians had that problem, and it had happened to that region (Eastern) for a while, and they couldn't figure out why. Then they figured out the only connection was that they all ate fried Squirrel brain. Tested the Squirrels, and that was it.

    Dangnabit, now I really am hungry!

    I used this one on a puffball I found a couple weenends ago. It had a good rich flavor but the texture of puffballs isn't quite what other mushrooms have.

    **Puffball Soup **
    From "A Cook's Book of Mushrooms"
    By Jack Czarnecki

    1/3 cup butter
    1 large onion, finely chopped
    4 cups chopped fresh puffballs, in 1 inch cubes
    2 cups heavy cream
    2 cups milk
    3 tablespoons dried loose seaweed, such as nori (available at Asian markets)
    Salt

    Place butter in a large saucepan over medium heat. Add the onion and sauté
    until lightly browned, about 5 minutes, Add puffballs and sauté 5 minutes
    more. Add remaining ingredients and simmer for 20 minutes. The soup will
    thicken slightly. Salt to taste.

    I use this recipe with tuktu(caribou) meat, I guess you could/would have to use it with deer since you're all south of 60'! I love stir-fry ... ;)

    -sliced up tuktu(caribou) meat ... deer in your cases!
    -sliced up red, green, orange peppers
    -sliced up onions
    -jalapeno peppers ... only a few sliced thinly
    -garlic sliced thinly to melt in the oil
    -hot sauce(your choice, I use REDHOT brand)
    -season salt, pepper
    -virgin or not ... olive oil
    -wee bit of hot mustard

    Fry it all up in a wok, put on a bed of wild rice and enjoy! Cheers gents,
